摘要:近几年，随着中国经济的发展，人民的生活水平得到不断的提升，同时生活节奏也愈来愈快，尤其对于大多数“上班族”来说，生活节奏的紧迫性使他们的餐饮场所逐渐从家庭转移到餐饮店，快餐已经成为了这个时代不可缺少的一部分。然而在当前中国的快餐业中，食品安全问题屡见不鲜。针对食品安全问题我国已建立了以《食品安全法》为核心的安全保障体系，但快餐食品安全问题还是会屡次出现。如何使中式快餐企业意识到食品安全的重要性，改变经营方式，强化社会责任，以推动中式快餐业的发展，已经成为研究中式快餐发展的一项重要课题。
本项目研究首先针对国内外的大背景对问题提出的原因及现状进行阐述；其次，分析了中国快餐业的发展现状和目前存在的问题；然后，运用定性定量的分析方法，针对中国快餐业自身发展的特点和问题，从政府、企业等层面给出相应的对策与建议；最后阐述如何更好的运用食品安全法对快餐行业存在的问题进行法律规制。

ABSTRACT:In recent years, with the development of China's economy, people's living standards improved continuously, at the same time the pace of life also more and more quickly, especially for most workers, the urgency of the pace of life makes their food facilities gradually transferred from households to restaurants, fast food has become an integral part of this era. In the current fast food industry in China, however, food safety problems. For food safety in China has set up a food safety law as the core of security system, but fast food safety problems will appear again and again. How to make Chinese fast food enterprises to realize the importance of food safety, change management way, strengthen the social responsibility, to promote the development of Chinese fast food, has become an important subject of research and development of Chinese fast food.
This project research first on the background of both at home and abroad on the cause of the problem put forward, and elaborates the status quot; Secondly, this paper analyzes the present situation and the development of Chinese fast food present problems; Then, using qualitative quantitative analysis method, in view of the characteristics and problems in the development of Chinese fast food itself, from the aspects such as government, enterprises give the corresponding countermeasures and Suggestions; Finally expounded how to better use of food safety law legal regulation on the problems existing in the fast-food industry.

对我国当前的经济形势来说，扩大内需成为了扩大消费的最重要的途径。近几年，随着中国经济的发展，人民的生活水平得到不断的提升，同时生活节奏也愈来愈快，尤其对于大多数“上班族”来说，生活节奏的紧迫性使他们的餐饮场所逐渐从家庭转移到餐饮店，快餐已经成为了这个时代不可缺少的一部分。中国统计年鉴最新数据显示，目前中国餐饮业年营业额已经超过2万亿元，并且，随着需求的不断增加，我国的餐饮业发展势如破竹，呈现出万马奔腾的势态，市场规模不断扩大，而在增长的份额当中，快餐成为了主力军。餐饮业成为了当前扩大内需的主要产业之一。
快餐作为食品，与人们的身体健康息息相关，然而在当前中国的快餐业，尤其是中式快餐企业，食品安全问题屡见不鲜。“瘦肉精”事件尘埃未落，“染色馒头”“回炉面包”“牛肉膏”又接踵而来，还有地沟油、染色剂……近期，一直以来给消费者留下良好形象的味千拉面也深陷“骨汤门”，号称用猪骨熬制的味千拉面汤底其实是用专门的汤粉、汤料调制出来的，尽管味千拉面的代表已经向消费者致歉，但企业信誉遭到破坏这一后果已无法挽回，味千公司的复牌市值已缩水79亿……
企业法律意识淡薄，为谋求利益最大化，不惜违背良心和原则，钻法律空子，坑骗消费者，忽视《食品安全法》，使市场的整体信用水平不断下降，消费者对企业的信赖感也不断降低，最终影响的是我国的餐饮业整体的发展。对比西式快餐企业，如肯德基、麦当劳、星巴克等，虽然其在食品安全上也存在一些问题，但整体来说，西式快餐企业还是比较重视《食品安全法》的。我认为，重视《食品安全法》已经成为了洋快餐席卷市场、快餐市场被欧美跨国巨头所瓜分、中式快餐企业始终竞争不过洋快餐企业这一现象的重要原因。
