摘要:本文主要运用了价值流图分析和工业工程的相关知识与技术方法,以准时化生产方式思想为理论核心,对著名外资餐饮企业A公司的炸鸡类产品的生产流程进行了改进研究,使其能够尽可能消除生产过程中的过量生产、库存容量、运输等不增值的浪费,提高生产效率,减少生产成本,缩短生产周期,以更完善、更合理的作业流程为客户提供满意的产品与服务,实现以拉动式生产为技术核心的准时化生产方式。本文详细阐述了A企业炸鸡类产品生产流程的价值流图分析,通过优化产品生产的流程、生产线的布局、生产计划的制定、信息方式的传递等方面,形成了新的生产流程,改善了生产流程的生产平衡能力,实现了以看板系统为基础的准时化生产,从而降低了交货时间,消除了大量生产和库存浪费,改善了生产现场。这对A企业以及其他餐饮业企业有效实施准时化生产方式改进生产流程具有借鉴作用,同时对准时化生产思想和理念在国内企业中的运用和实施具有一定的推广价值。

ABSTRACT:Taking the ideology of Just-In-Time Production as the theoretical basis, this thesis mainly adopts Value Stream Mapping, relevant knowledge and technical methods of IE to research how to improve the production flow of fired chicken product in the famous catering enterprise A. It can remove the non-valued-add waste like overproduction, inventory, transportation etc. It can improve production efficiency, reduce the cost and shorten Lead Time, provide the customers with more perfect and reasonable working process. In this way, Just-In-Time which takes pull-production as core technology is realized. This thesis elaborates Value Stream Mapping of fired chicken product the famous catering enterprise A. Through optimizing work flow, layout of production line, production plan, transport of information etc, new work flow will come out. It can improve the balanced capacity of production process, to realize Just-In-Time Production which is based on Kanban System, reduce delivery time, remove vast overproduction and inventory waste. This gives reference function to enterprise A and other catering enterprises to carry out Just-In-Time Production,while it has some promotional value to implement of Just-In-Time’s ideology in domestic enterprises.

本文的研究内容主要分为五个部分,第一个部分是绪论,主要介绍了论文的研究背景背景及意义、国内外文献综述、研究内容和技术路线;第二个部分叙述了与论文相关的理论概述,包括准时化生产、其中的拉动式生产、看板系统以及价值流图分析的概念、功能;第三部分阐述餐饮企业实施准时化生产的可行性分析,包括准时化生产方式的适用条件、餐饮企业的竞争现状、餐饮企业的生产分析以及餐饮企业导入准时化生产的可行性分析;第四部分是对A企业炸鸡类产品生产流程价值流图分析;第五部分为结论和展望,通过对全文进行分析,总结基于价值流图分析实现餐饮业进行准时化生产的作用,对论题的发展前景进行展望。
