摘要:蒙自石榴占全国石榴总量的三分之一，不管在种植面积还是石榴品质上都是处于全国领先的位置，但是蒙自石榴的深加工工艺还未成熟。目前，国内外已经对许多植物的果皮进行了多酚类物质的提取和应用研究，如：葡萄皮、香蕉皮等的研究，而对石榴皮作为一种重要的多酚资源尚未见研究利用的报道。本文以采摘后的蒙自甜石榴皮为原料，用丙酮作为提取剂采用索氏回流提取，对其石榴皮丙酮提取物，通过FRAP实验进行抗氧化性研究，从而找出最佳提取条件为：6号筛（100目）、提取前浸泡1.5h、溶剂浓度为85%丙酮、提取时间30min、料液比2:30。在此条件下：索氏回流提取效果最好，硫酸亚铁含量为81.971umol/L。同时：多酚、黄酮含量与所做抗氧化性实验所得的硫酸亚铁含量正相关，即在上述最佳条件下，总多酚含量为11.257mg/g，总黄酮含量为1.627mg/g。通过对POV抗氧化比较石榴皮丙酮提取物与其他抗氧化剂（如VC、VE等）的对猪油抗氧化性差异；可知总体来说维生素E的抗氧化性显著比维生素C和石榴皮丙酮提取物抗氧化性高的多。然而从本实验可看出石榴皮丙酮提物具有一定抗氧化活性。
